Hot and Sour Steak
INGREDIENTS:
2 Tbs Chicken Stock
2 Tbs Fish Sauce
2 Tbs Lime Juice
1 Tbs Sugar
1 Tbs Rice
2 Dried Red Chillis
2 Shallots, finely sliced
8 Oz Fillet Steak
Heat a griddle and cook the steak quickly over a high heat to your
preferred level of rareness. Slice it thinly and set aside. Heat the rice and
chillis in a small saucepan (without oil) shaking the pan frequently to
prevent burning. When the rice has turned a golden brown, remove from the
heat, place in a blender and blend to a rough powder. Mix the stock, fish
sauce, lime juice, shallots and sugar and heat gently. Sprinkle the rice and
chilli powder over the steak and pour the sauce over them.
