Curried Crab
INGREDIENTS:
2 Crabs (1 Lb each)
2 Fresh Red Chillis, finely chopped
2 Tbs Groundnut Oil
2 Tbs Red Curry Paste
2 Tbs Fish Sauce
1 Tbs Sugar
Handful Holy Basil, chopped
1/2 Can Thick Coconut Milk
Cook the crabs in boiling water for 5 minutes. Drain and set aside. When
cool, quarter the crabs. Heat the oil in a wok and add the curry paste. Cook
for a minute then add the chillis, fish sauce, sugar, basil and coconut milk.
Cook for a further minute then add the crab. Cook gently for s couple more
minutes, then serve with rice.
