Tom Yam Soup (Spicy Prawn Soup)
INGREDIENTS:
1 Pt Chicken Stock
1 Stalk Lemon Grass, finely sliced
2 Tbs Lime Juice
2 Tbs Fish Sauce
Handful of Straw Mushrooms, halved
8 Oz Raw Prawns, peeled
2 Fresh Green Chilli, finely chopped
1 Tbs Coriander, chopped
Heat the chicken stock with the lemon grass, lime juice, fish sauce and
chilli. Simmer gently for 10 minutes. Add the mushrooms and prawns and cook
for a further two minutes or until prawns are cooked through. Remove from the
heat, garnish with coriander and serve.
