Green Curry
INGREDIENTS:
Green Curry Paste:
12 Thai Green Chillis, chopped
2 Stalks Lemon Grass, chopped
4 Shallots, chopped
4 Cloves Garlic, chopped
2 Tbsp Galangal, chopped
2 Tsp Kaffir Lime Leaves, chopped
3 Tbsp Coriander Roots, chopped
1 Tsp Coriander Seeds
1 Tsp White Pepper
2 Tsp Shrimp Paste
1 Tin Coconut Milk
2 Tbsp Groundnut Oil
2 Tbsp Fish Sauce
1 Tbsp Sugar, or to taste
2 Oz Sweet Basil
6 Thai Aubergines, quartered
Chicken / Beef / Pork / Prawns
Place all paste ingredients in a blender and blend into a smooth paste.
Add a little groundnut oil if necessary. Heat the groundnut oil in a wok. Add
1 tbsp of the green curry paste and cook for a minute. Add the coconut milk,
fish sauce, sugar, basil and aubergines. Cook until the aubergines are
softening. Add the whatever meat you have chosen. Cook through and serve.
