Thai Scallops
INGREDIENTS:
Scallops
Red Chillis
Fish Sauce - 1 tbsp
Lemon Juice - 1 Tbsp
Sugar - 1bsp
Coriander
Red Onion
Finely chop the chillis and coriander and red onion. Add the fish sauce,
lemon juice and sugar. Stir to disolve. Heat a griddle very hot and sear the
scallops briefly on each side. The time necessary will depend on the scallop
size. Arrange the scallops on a plate and sprinkle with the chiils, coriander
and onion. Pour over the lemon juice mixture and serve immediately.
