Chilli Chicken with Basil and Coconut Cream
INGREDIENTS:
1lb Chicken breast fillets
4 shallots, finely chopped
4 red chillis (or to taste) finely chopped
4 Tbsp fresh basil, shredded
2 Tbsp Groundnut Oil
2 Tbsp Fish Sauce
1 Tbsp Sugar
1/2 tin Coconut Cream
Chop the chicken into dice sized pieces. Heat the oil in a wok or frying
pan and add the chicken. As soon as the chicken is cooked through (cut one of
the larger pieces in half to test) remove and set aside. Reheat the oil, add
the shallots and stir until softened. Add the chillis, basil, fish sauce and
sugar and stir for a minute. Add the coconut milk and heat through. Add the
chicken, stir and serve with rice
